Balmoral Bathers Pavilion chef Serge Dansereau secures lease
The ‘highly experienced and accomplished restaurateur’ who runs Balmoral Bathers Pavilion has just signed a new long-term lease.
Balmoral Bathers Pavilion operator Serge Dansereau must have plenty of fancy food ideas — he has just signed a 20-year lease.
Mr Dansereau and his team beat three other organisations pitching to run the renown restaurant and cafe for Mosman Council.
The Canadian-born chef has traded at the pavilion since 1998, and used his experience to convince a panel he should continue.
Mosman Council general manager Dominic Johnson said Mr Dansereau’s application provided the best outcome.
“We are assured that he will continue to provide a leading, high quality dining establishment that is popular with locals and visitors alike, and operate a business that is in keeping with the amenity and environment of the surrounding area,” Mr Johnson said.
The panel assessed business models, industry expertise, economic viability and operating amenity.
Mosman Mayor Carolyn Corrigan was pleased with the result.
“Serge is a well-known Mosman local and a highly experienced and accomplished restaurateur,” she said.
“He is to be commended for his operation of The Bather’s Pavilion under the current lease. “Under his stewardship it has made a wonderful contribution to the community, and we are confident this will continue to be the case.”
The current lease expires at the end of the year.
Mr Dansereau’s lease will be renewed to run from 2020 to 2039.
