A unique artisan bakery catering to people wanting gluten-free food options is seeking planing permission to open in Manly.
Wholegreen Bakery, which describes itself as being “fiercely passionate about providing gluten-free food that is delicious and innovative”, is looking at opening its doors on The Corso.
The business, which started in 2015 and already has outlets in Alexandria, Bondi Junction and the Sydney CBD, would be next door to the Coles Local supermarket, near the Manly War Memorial.
Its founder, Cherie Lyden, reckons the food is so good that it can be “enjoyed by coeliacs (those with an auto-immune disorder triggered by gluten, a protein found in wheat, rye, barley, and oats) and gluten-lovers alike”.
Wholegreen Bakery is the first bakery in NSW to be accredited by Coeliac Australia.
And Ms Lyden has twice won Champion Pastry of the Year titles, against glutinous pastries, at the Royal Sydney Fine Food Awards.
“In 2020, we decided to apply for accreditation from Coeliac Australia,” Ms Lyden stated on the business website.
“We believed it was important to provide coeliacs with the reassurance that comes with this accreditation, that we follow best practice for gluten-free food preparation and that every single product we make is safe for them to eat.”
She was prompted to set up her business after being diagnosed hypothyroidism then latent coeliac disease.
Her youngest daughter was also diagnosed with coeliac disease at age four.
Ms Lyden is a brand ambassador for Coeliac Australia and a vocal advocate for the coeliac community.
If approved, the Wholegreen Bakery would have a bench with four tables for customers, according to a statement of environmental effects lodged with the DA to Northern Beaches Council.
The bakery also sells its products online with choices ranging from sourdough rolls and loaves to croissant, tarts. cookies, cakes and pies.
