How to make dulce de leche

Razorback’s Carmelita February shares her recipe for dulce de leche, which is popular in South American countries.

Dulce de leche, with salted pretzels and nuts

Ingredients:

900g milk

250g raw sugar

200g cream

½ tsp bicarbonate of soda

Method 1:

(Using a Thermomix)

Cook all ingredients on Veroma temperature, speed 5, for 50 minutes with the measuring cup angled to allow steam to escape.

Method 2:

Otherwise, place all ingredients in a saucepan on low to medium heat.

Stir the mixture frequently for 50 minutes until the ingredients thicken and turn a golden colour.

The recipe will make about 600g of dulce de leche.

Store in a container in the refrigerator for 2 to 3 weeks.

Serving suggestion: Serve with pretzels and nuts.

AS A child, Carmelita February recalls going to family gatherings and at each event there would be a delicious sponge cake with fresh cream caramel and banana to enjoy.

“I was in heaven,’’ Mrs February said.

Mrs February, of Razorback, 44, who runs Soul Food Mumma, now enjoys making dulce de leche and she likes the flavour combination of serving it with salted pretzels and nuts.

She said dulce de leche was a treat that everyone can appreciate and enjoy.

“Making our pizzas with dulce de leche and banana is a treat that everyone needs to try too! Yum,’’ she said.

Mrs February said hand- making dulce de leche can be quite labour intensive due to the constant stirring of the mixture in a saucepan.

“It is time consuming as the milk, cream and sugar needs to be reduced until it thickens and caramelises,’’ she said.

Her solution is to throw all of the ingredients in a Thermomix machine for 50 minutes.

“It does the trick perfectly. It stirs it while it cooks, and is simply amazing,’’ she said.

However, Mrs February has also provided a version using a saucepan on a stove.

Home cooks are advised to make they stir the mixture regularly to make sure it does not burn. Mrs February found the recipe for dulce de leche on the internet and adjusted it to her liking.
