Global Kitchen: How to make banoffee pie

BANOFFEE PIE:
Ingredients:
For the base:
200g digestive biscuits
100g pecan nuts
100g melted butter
For the caramel:
100g butter
150g dark brown sugar
250ml double cream
For the topping:
3 large bananas
300ml double cream
1 teaspoon vanilla extract
Flake chocolate bar
Method:
1. Put the biscuits and nuts into a plastic bag and crush them with a rolling pin. Mix in the melted butter.
2. Press the mixture into the base of the tin and flatten until the surface is even. Place the base in the fridge for 30 minutes.
3. To make the caramel, melt the butter and brown sugar together. Add cream to the melted butter and let it bubble for 5 minutes until it thickens a little. Then leave it to cool.
3. Spread the caramel over the biscuit base. Slice bananas and cover over the caramel.
4. Whip cream with vanilla until it forms soft peaks, then spread over bananas.
5. Crumble the Flake on top of the pie and put in the fridge until ready to serve.
WHEN Raby resident Margaret McGlinn found a recipe for banoffee pie in a book called A Tiny Bit Marvellous she knew she was on to a winner.
The pie is so delicious that it lives up to the title of the book, which was written by English comedian Dawn French.
“I have made this dish for both my daughters’ engagement parties and it proved to be a success with one friend giving it a 10 out of 10,’’ Mrs McGlinn, 66, said.
That friend, Therese Baughn, of Glen Alpine, is also the person who gave Mrs McGlinn the Gorgeous Grandma apron she wore for our photo shoot.
The two friends met when they were in hospital each having their first child 33 years ago.
Mrs McGlinn received the apron gift when she found out she was going to be a grandmother when daughter Emily announced she was expecting her first child, Oliver, who turned one in May.
Mrs Baughn is about to become a grandmother herself and her friend is searching for an equally heartwarming gift.
Mrs McGlinn said banoffee pie was popular with her family and friends and easy to make.
“My nephew put it on Facebook,’’ she said.
“It’s not difficult. Just make sure the butter and brown sugar don’t cook too long and burn.’’
