When it comes to Krispy Kreme doughnuts Liverpool is ranked number one in Australia.

The factory shop at the Liverpool Megacenta is the busiest store in the country and is in the top five of the stores globally, producing 6000 of the sweet delights each day.

To celebrate National Doughnut Day this Friday June 2, it’s giving away 12,000 of them to its loyal customers.

Lena Rose is the production manager for both the Liverpool and Mascot stores. She started out as a barista and has worked her way through the ranks.

The Casula woman said it takes about six hours to create the mix, make the doughnuts, bake them and glaze them.

Mesmerisingly you watch the doughnut shape start in the proofer. It is here it takes about 40 minutes for it to rise and resemble a doughnut. It is then in the fryer. Flipped. Then pushed through the glaze fountain, a liquidy white goo that finishes off the simple sweet treat.

It turns the curve on the conveyor belt and travels through the cooling tunnel before quality control hand-pick the perfect doughnut.

When the red light sign, called a “hot light” is on, it means customers can ask for a freshly made doughnut.

From fry time to completion, the production team can make 46 dozen glazed doughnuts in 15 minutes.

Each day the team makes about 6000 of them.

“I love what I do,” Mrs Rose said. “From Wednesday to Sunday we do two production runs at Liverpool — 6am to 2pm and 6pm to 2am.”

But life could have been very different for the south west Sydney woman who came to Australia 20 years ago on a holiday.

The Macedonian woman met her future husband and settled here.

She worked in factories, usually working night shift and eventually became a barista.

She said working in more of a customer service role was a natural progression for her.

“I love seeing people smile and there’s always lots of smiling people here at Krispy Kreme,” she said.

Her favourite doughnut is cookies and cream with strawberry coming a close second.
