The markets operators this month said they will move at least some of the Flemington operation to the business corridor being planned around the Western Sydney Airport at Badgerys Creek.
Property group the Urban Taskforce has hired an architect to produce drawings of how the site could be redeveloped.
The designs show unit towers on the perimeter, and markets at the centre.
About 10,000 residents could share the site with 4,000 agriculture workers, according to the Taskforce.
The land would require rezoning from “special use” to be used for housing.
Yet Cr Vaccari said it was “early days” in what might happen.
He has spoken to the market operators previously about their plans and wants to do so again.
The venue was important for jobs and trade, Cr Vaccari said.
“If by any chance they are thinking of leaving it will leave a huge gap in employment,” he said.
“I’d be disappointed if they don’t keep something here at Flemington.”
In a statement, Sydney Markets chairman John Pearson said time would tell if the site was retained.

The Courier called Sydney Markets representatives but they did not provide further comment.
They have previously said fewer warehouses around Flemington has lead suppliers to move west.
The markets have been at Flemington since 1975.
