A Hills mum and a chef who has worked at several popular hatted Sydney restaurants are set to open a new Hamptons-style cafe which will become an exciting brunch destination.

A Hills mum and a chef who has worked at hatted restaurants across Sydney are teaming up to open an exciting new Hamptons-style cafe.

Christine Camilleri will be opening the venue in partnership with Sydney chef Andy Cooper at Coonara shopping village.

Cooper has worked at acclaimed venues including the likes of Sixpenny and Four in Hand in Paddington.

Customers will walk into a modern Hamptons-inspired interior with oak timber floors, white tables and booth seating.

“It will have white picnic tables outside with umbrellas. Think the Boathouse in Balmoral,” Cooper said.

Garden beds filled with lavender at the front and a colourful herb garden featuring edible flowers will line the back.

It will also feature a cubby house for the kids surrounded by a white picket fence along with plenty of outdoor seating.

Cooper said the menu will be seasonal and produce will be fresh from the markets daily.

“We want it to be a destination cafe and a place where people can come and enjoy a coffee and quality meal,” he said.

Camilleri, who also runs The Burrow cafe, said she had her eye on the location for years saying the area needed more brunch options.

A takeaway window and plenty of outdoor seating were also incorporated in the designs as part of what she learned from the impact Covid-19 has had on dining.

The cafe is currently getting fitted out in a freestanding building on the 500 sqm site.

The duo hope to open the cafe in August pending council approval.

“We are waiting on council to approve the external seating,” Ms Camilleri said.

“Hopefully by the time we come out of lockdown we would be ready to go. We are really excited.”

The cafe is located at the old Mel’s hairdresser site at 35 Coonara avenue and will operate 7am-3pm daily.
