ATURA Hotel head chef Adam Petta spends about six weeks in the US every year seeking inspiration for his roadhouse-inspired menu.
The American diner experience is very much at the heart of Petta’s new menu for the hotel’s restaurant, the Roadhouse Bar and Grill.
In true west coast style, melted cheese is the star of the show. We start with the mouth-watering deep fried mac ‘n’ cheese balls with smoky maple barbecue sauce followed by cheeseburger dumplings.
There are also some lighter options with the caprese salad and calamari fritti. The food is fresh, tasty and well presented.
For mains, we have flat iron pepper steak and pan fried barramundi.
The steak is cooked to perfection at medium rare and comes with a delicious peppery sauce.
My colleague is pleased with her barramundi, which is also beautifully presented.
Petta also spends time in Japan and you can see it in his plating and knife skills.
They are skills that have been drilled into him since he was a child, working in his parents’ cafe, the famous Bill and Toni’s Italian restaurant in Stanley St, Sydney.
“It was driven into me that I was destined to do something with food,” he said.
Today, Petta is the culinary group director for Event Hospitality and Entertainment, which owns Event Cinemas, Rydges Hotels and Atura Hotels among others.
He said the new menu was about bringing the Atura Hotel brand as a roadhouse to the fore.
