Chippendale’s Gin Lane kick off 2019 with new cocktail menu

GIN Lane has well and truly transformed Chippendale’s Kensington St into a beverage lovers paradise.
Kensington St used to be packed with restaurants, but “with the success of Gin Lane, people are coming to the street as a beverage destination,” Head Mixologist Grant Collins said.
To keep up with demand, they have just recently opened up ‘Spritz’ rooftop bar, located just down the road from Gin Lane.
Gin Lane have just launched their 2019 cocktail menu.
Mr Collins — who has the tough job of tasting and testing each cocktail — said the new flavours are already proving to be a massive hit.
The main favourites include, the Smokers Delight, which is a hemp based cocktail with matcha tea and an incense stick.
The treasure chest, a shared cocktail served in a grand treasure chest, made from rum with apricot liquor and cold pressed pineapple juice.
“We take it to the guests, open it up and we serve it with sparklers and dry ice, it’s pretty spectacular,” he said.
For Chinese New Year, Mr Collins and his team have prepared a spiced gin and tonic that features an Asian style gin with Chinese spices.
In the coming month, they will be adding another five to six cocktails to the list.
One in the works involves a helium balloon that will explode and cover guests with a scent.
“We really try and work on experimental drinks,” he said.
“We play with a lot of scents and smells, that’s a big thing that we do.”
Mr Collins said the ideas never stop.
“Day in day out, there’s always ideas,” he said.
“We try and get together once a month, we flesh out any thoughts we’ve got.”
But Mr Collins said he uses himself as the test dummy on all of the team’s creations.
“When the reaction is really positive we take that on board before we put it on the list,” he said. “When we tested out the smokers delight, the reaction was huge.”
