Central Coast Restaurants: Gosford RSL’s Luminous Brasserie

With a redevelopment in the wings, Gosford RSL is not leaving the present behind, revamping its Luminous Brasserie with new executive chef Trent Webber bringing his vast experience to the table.

When you think of club food, you think about a cheap schnitzel or a Tuesday roast with all the trimmings.

Nowadays, while it remains affordable, club food has been taken to a new level.

The perfect example on the coast is Gosford RSL, which has new executive chef Trent Webber running the kitchen.

Webber has been brought on to help guide the RSL through its massive redevelopment, however his first project has been the revamped Luminous Brasserie.

The menu has been completely overhauled. Now you can choose from a variety of cuisines under the banners of A Taste of Italy, the Americas, South East Asian Delights, The Classics, From the Land and From the Sea.

“My specialty now is modern Italian, however I am trained in seafood and game,” Webber said. “I’m helping bring the technique to lift the standard of cooking.”

He said many of the classics remain on the menu, however he has given them a modern touch.

“Our schnitzel has a white Japanese panko crumb and the chicken is poached,” he said.

“We see 900 to 1000 of those a month.”

We sampled Webber’s signature pan seared potato gnocchi — the softest pillows of gnocchi perfectly complimented by the richness of the chorizo.

The Italian inspired king prawn mafaldine pasta was full of herbs, and flavours complimenting the fresh prawns.

While the weather remains cool, the mild Malaysian laksa is a popular choice with the perfect balance of spices.

Webber, who has a background in hotels, said the RSL was proactive.

“It’s owned by members so all the funds get put back into the club,” he said.

The Newcastle-born chef started in fining dining, and has worked throughout the Hunter Valley including the two hatted Rock Restaurant.
