Bonython Tower cafe, bar and restaurant to open next month

A celebrity chef and the owner of a fine dining destination on the Coast are set to run the stylish new bar and eatery under John Singleton’s Bonython Tower. Here’s a sneak peek.

A “food revolution” is happening across the Central Coast, according to Bells at Killcare owner Brian Barry.

Mr Barry and his wife Karina, along with executive chef Sean Connolly, are geared up to run the bar and restaurant on the ground floor of John Singleton’s Bonython Tower called The Bon Pavilion.

The Bon Pavilion is on track to open next month, and the Express was given a sneak peak at construction pictures leading up to the soft opening.

“There are new establishments opening in Gosford, indication there is a change on the way,” Mr Barry said. “Gosford is back.”

He said The Bon Pavilion would include a “number of things happening under the one roof”.

“It’s cafe in the morning, restaurant from lunch on and bar happening all the while,” he said.

“With Sean involved, it will be understated on the menu but when it arrives it will be simple and exceptional. The whole place will be outstanding, when people walk in they will stand still. There’s nothing like it, it’s incredibly stylish. I am really pleased to be part of John’s vision for Gosford.”

Mr Barry, who has run Bells for the past 12 years, said when he was given the opportunity to be involved in Bon Pavilion, he thought the timing was right.

“Units are going up quickly, it’s an exciting time for Gosford,” he said. “It just assures us that we are on the right track.”
He said the entire Coast was going through a “food revolution”.

“It’s fantastic, we have seen kids come through Bells and have gone on to open great businesses on the Coast such as Bombini and Young Barons,” he said.

“We don’t see them as opposition, it’s part of the food revolution. There are so many young people coming to the Coast. Once upon a time it was a place to retire and now it’s very much a place to live and we are really proud of that.”
