Owner Daivid Cui said the key to the cafe chain’s success was staying on top of the latest food trends.

“We try to come up with something that is a bit different every few months with the change of the seasons,” Mr Cui said.

“We’re always trying to give customers a different experience.

“We do a lot of research, going out to other cafes and having a look at what the trend is that’s coming up and bringing it to Blacktown.”

He said it was essential to strike a balance between visually appealing dishes with flavoursome ingredients.

“The food has got to be tasty. When you eat a meal, the first thing is the visual effect and the smell and then that’s when you start digging in and tasting as well,” Mr Cui said.

Among the cafe’s most popular brunch dishes were the avocado and haloumi stack, eggs benedict and the Canadian breakfast with pancakes, bacon and poached eggs.
