A CHEF to the stars is bringing his culinary skills to the plates of local diners at The Ville Resort-Casino.
New head chef of banqueting Nick Kennedy has served dishes for celebrities including Richard Branson, Rihanna, Snoop Dogg and the Wu Tang Clan, and has just about done it all when it comes to fine dining.
He started fine tuning his talents in his native Liverpool, and it was where Mr Kennedy started making his name.
“We had a real emphasis on fresh produce and cultivating the right combination of flavours for each dish which I believe was the reason we attracted high profile figures time and time again,” Mr Kennedy said.
“I have a real focus on local and fresh produce as well as passing on my skills to the next generation.
“I’ve been lucky enough to have been every different role in a banquets kitchen and to have worked at such a wide variety of establishments with all quite different clientele."
Kennedy said fresh produce, engaging local suppliers, and investing in the next generation of skilled chefs is key.
“Fine dining is all about the produce, who and where it’s from. I always want to be able to touch my supplier, know where they are and know where the produce is coming from,” he said.
“I’ve been speaking with local primary producers down at Spring Creek Barramundi, for example – some of the cleanest fish I’ve ever tasted – and Black Produce out Charters Towers way.
“I want things that have been grown with love and animals that have been raised with the love of the farmer. Anything that keeps our carbon footprint down and puts money back into the local economy.”
The new banquets menu will be incorporated into the upcoming festive season lunch and dinner offerings including the Giant Christmas Party and Christmas Day in the Pavilion.
