Adelaide’s newest five-star hotel has revealed the man tasked with delivering five-star food to its guests.
South Australian Alexandre Katsman is the $200m Adelaide Marriott Hotel’s new executive chef and will oversee their food and beverage offering.
This includes two new venues within the historic GPO building, including modern restaurant Penny Blue, and all-day coffee and cocktail bar, Exchange Lane.
Mr Katsman was previously executive chef at the Sofitel Adelaide’s restaurant, Garcon Bleu, and has 20-plus years’ experience in the industry, leading teams at top hotels in SA and Tasmania.
“I’ve had the privilege of working in many highly regarded hotels and restaurants within Australia but I couldn’t be more thrilled to be in my hometown, driving the dining direction for guests and visitors to the very first flagship Marriott Hotel in Adelaide,” Mr Katsman said.
Mr Katsman, who will lead a team of 19 chefs across the hotel’s multiple kitchens, said his dishes at fine diner Penny Blue would “celebrate both tradition and innovation”.
“Menus with a nostalgic touch are trending globally because they offer comfort and evoke cherished memories,” he said.
“At Penny Blue, we blend ‘new and modern’ with classic favourites like Prawn Cocktail, Beef Wellington, and Bread and Butter Pudding for dessert.”
Marriott International, the world’s largest hotel chain, will launch the luxury hotel, on the corner of King William and Franklin St, on Thursday, August 22.
Marriott International also operates Sheraton, W Hotels and The Ritz Carlton brands and has more than 30 properties in Australia.
