Chef who ran much-loved inner-city Brisbane cafes has opened his own in the suburbs
With a menu that includes duck eggs Benedict, 12-hour cooked brisket burgers and cronuts a new cafe in Brisbane’s north is bringing inner-city sensibilities to the suburbs.

After more than a decade working as a chef and venue manager Hayden Griffiths was ready to strike out on his own.
And then the coronavirus struck.
But despite a global pandemic and an economic downturn, Mr Griffiths pushed on and in August he opened Papas Corner cafe in Stafford.

“It was a pretty scary time to start a business but I said if it’s going to happen it is going to happen,” he said.
“And it’s been really good. We’ve had really good support and it’s been busy.”
Papas Corner has a seasonal menu, anchored by their signature duck confit eggs Benedict, as well as a 12-hour cooked brisket burger, bagels and treats like cronuts. They also feature their own speciality roasted coffee.
“We wanted something that sets us apart and that’s probably the dish,” he said.
“People are loving it too which has been great.”
The former head chef and general manager of Brew cafe and Bar in the CBD and boss of Paddington’s Hopscotch and Beans said he wanted to know how every part of the restaurant, bar or cafe worked.
“I wanted to do everything before I ventured out on my own,” he said.
“I wanted to know how coffee works and how to run a bar if we ever decided to go that way.”
He said he wanted to bring what people loved about inner city cafes into the suburbs.
“We’ve had so many people come in and say ‘This is exactly what we were looking for in our suburb’,” he said.
Papas Corner cafe is open for breakfast and lunch every day in the newly redeveloped Stafford Central centre.
