Trident Fish & Grill opens in old Red Rooster shop on Keen Street, Lismore

Lismore has reeled in the catch of a day with a new fish and chip shop opening this week on the former site of a fading fast food giant. Here’s the full scale of what’s on offer.

Lismore is bracing for another culinary treat with the highly anticipated opening of a new fish n’ chip shop downtown – and its owner says customers will be caught hook, line and sinker.

Taking over the Keen St site of a former Red Rooster eatery, The Trident Fish & Grill has been in remodelling mode readying for its grand opening on Tuesday.

With more than 25 years experience in the trade, owner Chris Photiou has made two promises to new customers when they visit the store.

Mr Photiou said the fresh seafood will be the tastiest in town – coming direct from the boat – and customers will receive top-notch service.

“We only use wild-caught fish from Australia and New Zealand and make everything from scratch, right down to the batter,’’ Mr Photiou said.

The grand opening will start at 11am and finish at 2pm. Throughout the 3-hour event there will be family-friendly activities, a live DJ, photo opportunities with celebrities such as Regina Bird (2 x Big Brother winner and the “Queen of Fish & Chips”), and MC of the event, Australian TV personality, Mike Goldman.

“This includes the delicious burgers which are made from 100 per cent pure beef and the desserts which are made in house as well.

“We guarantee freshness as we never use frozen, pre-battered or pre-crumbed ingredients.’’

Mr Photiou also hopes to employ around 40 staff members when it is fully operational.

“You haven’t tasted fish and chips until you have tried ours,’’ Mr Photiou said.

“It is more than just a staple, it is restaurant-quality food at affordable prices.’’

Fish and chips run in Mr Photiou’s blood.

His father Tony opened the family’s first Trident Fish Bar in Eastbourne in England in 1984.

In 1991, when the family migrated to Australia, they opened the Trident Fish Bar International at Queenscliff in Victoria.

A decade later they relocated to Ballina and in 2001 opened the Trident under the Big Prawn.

In 2019 they relocated the store to Alstonville.

In that time, the Trident Fish & Grill earned the mantle of the #1 fish and chips shop on the North Coast.

Mr Photiou said he has always felt a “connection” to Lismore because it’s very “community-oriented”.

“We grew up on the North Coast here and we live 15 minutes away,’’ he said.

The Trident has long sponsored local sports teams and when the floods hit, Mr Photiou helped the community by using The Trident to cook meals to help feed displaced Lismore residents in the emergency shelters.

Mr Photiou said he loves hospitality and serving food.

“Food is a way for people to come together,’’ he said. “Obviously, with our Greek heritage, that’s what food is all about.’’

“There’s not many places you can go and know you are going to get good fish and chips – but I guarantee the Trident is one of them.’’
