After a three year pause smokey and delicious favourites will soon be back on the menu at a landmark Cairns city restaurant.
Bushfire Flame Grill at the corner of Spence St and the Cairns Esplanade suffered under Covid travel restrictions and temporarily closed soon after the pandemic hit in 2020.
The award-winning Brazilian-inspired Australian barbecue experience on the Esplanade is well known for skewered beef, pork and lamb barbecue dishes.
Bushfire Flame Grill was shut for more than three years.
Pacific Hotel general manager Sheena Matthews said the reopening was an important milestone in the business’ recovery from the impacts of Covid.
She said the corner block waterfront restaurant will undergo a major facelift before a grand reopening planned for March 28.
“We are getting some structural work on the outside done. We are getting the external roof replaced,” she said.
“We are changing the colour scheme to match with the Pacific Hotel, from a green roof to a dark grey.”
Pacific Hotel head chef Adam Thorpe will lead the Bushfire Flame Grill team.
Soon after Covid travel restrictions impacted Cairns the Pacific Hotel was operated as a the city’s main quarantine hotel.
It’s understood it became difficult for the hotel to keep Bushfire Flame Grill trading with housing guests undergoing mandatory quarantine next door.
The hotel has not operated as a Covid lock down facility since April 2022 and underwent a deep clean ahead of welcoming back non-quarantine guests.
Ms Matthews said diners will notice some changes to the menu and specials will be announced in the lead up to the opening next month.
“We are very excited, we have made some changes. We are calling it Bushfire 2 because there are changes to our menu,” she said.
“We just want to make sure everyone that comes has the best experience.”
Topcon Builders have been announced as local contractors responsible for the renovation work.
“We like to use local builders where possible,” Ms Matthews said.
