It’s called the Anvil. And it works the tastebuds, while smashing the hip pocket. So would you pay $420 for a chance to try this caramel mousse?

The Bathers’ Pavilion in Balmoral will open their bookings at 10am on Tuesday — Valentine’s Day — for their upcoming residency with renowned British chef Simon Rogan, who is bringing his three-Michelin started L’Enclume to the venue in July.

Rogan has been working for years to bring the famed restaurant, which has featured in Steve Coogan and Rob Brydon’s sitcom The Trip, to Australia, and will lead the kitchen for every service over the five-week period.

He has confirmed that on the menu will be L’Enclume’s signature dessert, ‘Anvil’ which is a caramel mousse with miso, winter apple or pear and spruce. It’s a tribute to the blacksmiths workshop that used to be the location of Rogan’s South Lakeland English restaurant.

It’s also this dish that Rogan has commended as being the menu item that won them their third Michelin star in 2022. One international reviewer has described it as being “sprinkled with fairy dust.”

The tasting menu includes eight courses, plus snacks and petit fours and costs $420 a head. Those wanting to dine have to pay for the experience upfront. Want wine? Tailored wine packages can be added for $190, $290 and $750 per person.

Despite the residency coming at a time when cost of living is a daily conversation, and nine interest rate hikes in a row have stung many, the co-owner of Bather’s Pavilion, Jess Shirvington, believes Sydneysiders still value fine dining.

“There is always a place for fine dining.” said Shirvington.

“In the same way there is always a place for entertainment, theatre and concerts. I think, as a society we are now more than ever, looking for value in what we are spending our money on and many are leaning towards the value of experiences rather than possessions.

“The L’Enclume Residency offers Australians an opportunity to have this unique and special experience in their own backyard.

“As well as curating this ultimate dining opportunity, price was at the forefront of our minds and ensuring guests would enjoy the entire service, rather than enforcing restricted sitting times.

“I’m confident we have presented the market with fantastic value. If early inquiries are any indication, our diners agree.”

L’Enclume isn’t the only three Michelin star residency coming to Sydney.

In March, the former best restaurant in the world, Mirazur, is coming to The Gantry for three weeks.

The French Riviera restaurant is run by Argentinian-born chef Mauro Colagreco and there tasting menu, plus snacks, cost $685 per person, with wine pairings starting at an extra $210.

This is the first time Rogan has replicated the L’Enclume dining experience anywhere else in the world.

We have been planning out the finer details and intricacies of this residency since 2019 and we are beyond excited to see it finally come to life and to give Australian diners the best possible experience. I’m very much looking forward to dips in the ocean before cooking for our guests at every service,” he said.
