South Coogee local cafe Lion & Buffalo is bringing caviar bumps to the burbs for breakfast

Sydney’s craze for caviar continues to gain force, with the Lion & Buffalo bringing the bump to the burbs by adding it to its cult dish. And to its scrambled eggs.

A cafe in South Coogee has added an ingredient to their menu which they promise will be twice as good as sex.

Lion and Buffalo in South Coogee has gained a cult following for their “Better than Sex” breakfast ramen.

Now consulting chef Tomislav Martinovic, who has worked with the acclaimed Heston Blumenthal, has added caviar to the cult dish.

Martinovic decided to use the salty fish eggs after trawling Instagram for inspiration.

“These days I buy less cookbooks and look at Instagram. I’ve been seeing great chefs hitting their dishes with caviar so why can’t a cafe do it too,” he said.

Proving once again that caviar is the food trend of 2022, Martinovic has also created a luxe new caviar brunch menu through November. The luxe fish eggs are also served on their breakfast sandwich, scrambled eggs and a white chocolate ice cream.

Martinovic adds he was concerned he might have pushed the cafe boundaries too far.

“I’ve been worried about that everyday since I pitched that. It’s a cafe experience, but I’ve tried to make it accessible and only added caviar if the dish could honestly taste better for it. Otherwise it’s just extra salt,” he said.

“There were times in the kitchen when I went, this is nice, but I could get just as excited about the inclusion of a Granny Smith apple!

Martinovic work at the acclaimed Fat Duck in London means he’s willing to push boundaries and said now cafe owners are willing to experiment with breakfast menu items, not just lunch.

“This cafe is right near a beach. Never would I have thought a heavy, porky, ramen would be the best selling option. People are going for swims after! But it shows how things are changing,” he said.

While Martinovic added the fish eggs to traditional breakfast items, he stopped short of including it on smashed avo on toast.

 “Who is going to pay $38 for avocado on toast,” he said.

The Lion and Buffalo joins the list of venues adding caviar to their menus after Mimi’s in Coogee, sent the caviar bump viral.

Newly opened The Charles on King Street in the CBD has given it’s boiled eggs and soldiers a glow up with the inclusion of caviar.
