Sydney hospitality giant Maurice Terzini unveils plans for Jacksons on George

Iconic Sydney city hotspot Jacksons on George is one step closer to being brought back to life with the announcement of a new head chef.
The former latenight dive bar, which closed in 2018, is being brought to life again by the DTL Entertainment Group, with Icebergs restaurateur Maurice Terzini at the helm as the Creative Director.
Terzini’s chef from the Bondi restaurant, Steve Sinclair, will head up the kitchen at the new venue.
Sinclair has also worked at Ireland’s top restaurants The Old Schoolhouse Inn and The Potted Hen, as well as in England at Simon Rogan’s Michelin-starred L’Enclume, which is currently in residence at The Bathers Pavilion.
Terzini said that his vision for the project was to make Jacksons on George “a great f*cking public bar. It’s going to be very Sydney. That’s my brief. I don’t want it to feel like New York,” he said. “I’ll give it that bit of Terzini glamorous punk.”
Jacksons on George in the newly named Sydney Place was due to be open mid year but will now open in spring. It’s set to become one of the most hotly anticipated openings of the year.
There will be three levels to the new venue.
The Public Bar on the ground floor is set to offer a contemporary take on pub classics, like cotechino and mustard fruit sausage roll made with slow cooked duck sausage or a Morton Bay bug bun.
Bistro George will offer a mix between a European and Australian menu like Clam Casinos, a wagyu salt-crusted rib eye and a banoffee sundae. The bistro will then turn into a late-night bar with live music and a supper menu.
There will also be an alfresco rooftop bar.
Terzini added bringing Sinclair across from Icebergs was his way of rewarding his staff.
“Rather than go out and buy all star staff, I’ve always looked within. I’ve got good, hardworking and talented people who work for me,” he said.
Terzini is bringing the project with hospitality entrepreneurs Paul Ford, Steve Bannigan and publican Michael Broome.
They’ve also collaborated with Archibald Prize finalist Kaylee Whiskey to commission artwork across the venue.
