Humble no longer, bread and butter new hero dish

A new Sydney eatery is offering a first of its kind bread and butter service to kick off meals and its luxe flavours will blow your tastebuds. See what they are.

In the words of Madeline, ”We love our bread, we love our butter, but most of all we love each other.”

Kitchen Confidential is keen to check out new CBD eatery, tilda, which claims to be offering the first of its kind ‘bread and butter’ service.

Set to open on October 9, tilda will inject some theatre into the dining experience with a special ‘bread and butter trolley’ to be wheeled out to tables.

“It’s a concept that’s popular in the US but hasn’t really been seen here,” head chef Nathanael Merchant said.

“Our wait staff whip up a luxe butter tableside using Pepe Saya, chives, and eschalot, served alongside grilled jersey milk cheese and saltbush focaccia. It’s a fun, interactive way to kick off the meal and sets the tone for the experience to come.”

With this in mind, KC has compiled a list of Sydney’s top bread and butter offerings we are sure tilda will be added to once open.

More broadly, tilda will offer its take on Aussie classics like surf and turf and upside down pineapple cake.

“We wanted to create a dining experience that feels familiar, yet still offers something fresh and exciting,” Merchant said.

“There’s a nod to iconic Aussie dishes, like a reimagined surf and turf with ribeye and lobster — taking the classic pub favourite and elevating it with refined sides and condiments.

“We’ve also brought in playful takes on 80s desserts, like upside down pineapple cake with whiskey anglaise and a lemon and cheese cake trifle, served tableside. It’s about celebrating where Australian cuisine has been and where it’s heading.”
