Four years after closing, The Rocks steak restaurant The Cut Bar & Grill is set to reopen

Four years after it closed its doors, steak restaurant The Cut Bar & Grill is making a comeback.

The Daily Telegraph can reveal that The Rocks based restaurant, which is known for serving up a slow roasted rib eye, will reopen in September.

The basement restaurant, run by Hunter Street Hospitality, shut up shop during Covid.

CEO Frank Tucker believes despite a cost of living crisis, now is the right time to bring the restaurant back at its original location.

“Everyone else is closing, I’m not closing anymore, I’m going to open,” Tucker said.

“I was waiting for tourism to come back to The Rocks and we’ve seen that.”

“I said I would open at an appropriate time and it’s now an appropriate time. The Cut is the last one of our restaurants to reopen and we’ve been waiting to open this. The stars have aligned.”

The hospitality group knows a thing about steak restaurants. They also run Rockpool Bar & Grill, which for the past two years has been named the eighth best steak restaurant in the world.

The relaunch of the restaurant would see the return of the “hero” dish the ribeye which is sliced at the table. But also they are introducing some new snacks to the menu, including pigs in blanket. The menu has been designed by the group’s trio of Executive Chefs Santiago Aristizabal (Rockpool Bar & Grill), Shimpei Hatanaka (Saké Restaurant and Bar), and Andy Evans (Spice Temple).

Tucker added as well as opening The Cut, his team are working hard to see Rockpool rise up the ranking and be named Best Steak restaurant in the world.

“Within three years we will be Number One in the world and we are taking steps to get there,” Tucker said.

“When we were named Number 8, we celebrated. It takes a lot of work to maintain that ranking. It’s no small feat to be in Top 10 but starting from tomorrow we are going to go up.”

The Cut Bar and Grill will open on September 20.
