Celebrity chef Luke Mangan hangs up apron at Glass Brasserie, at The Hilton Sydney

It’s a Sydney icon which has served A-listers including Elton John, Priscilla Presley, Tom Cruise and Nicole Kidman. Now, celeb chef Luke Mangan is breaking with Glass Brasserie.

After almost 20 years, celebrity chef and restaurateur Luke Mangan is putting down the knives, hanging up his apron and calling time on his tenure at Glass Brasserie at The Hilton Sydney.

Mangan has decided to mutually part ways with the restaurant, which has become one of Sydney’s most iconic.

His partnership with the restaurant, which started in 2005 when he opened the level two restaurant at the hotel, will end at the end of the year.

For almost two decades, Mangan has served A-list celebrities from Elton John, Priscilla Presley, Tom Cruise, Delta Goodrem and Nicole Kidman at the venue.

It’s also been the location of some of the Sydney’s most famous power lunches: like in 2023 NRL Chairman Peter V’landys and NRL CEO Andrew Abdo and Channel 7’s James Warburton and Lewis Martin chose Glass to have their meeting about Channel 7’s $150m bid to steal the NRL television rights from Channel 9.

In a statement, Mangan said “it has been an incredibly rewarding and successful 20 years of service”, adding he was looking to working on new projects.

Hilton Sydney confirmed that while Mangan was moving on, Glass will remain under the leadership of Chef de Cuisine Natalie Murphy and Head Sommelier Mauro Bortolato.

“Luke has been a great partner,” said Sydney Hilton general manager Malcolm Zancanaro.

Mangan and Glass Brasserie were part of launching Sydney’s first post pandemic long lunch, in partnership with the NSW Government.

In 2023, Mangan marked 18 years at Glass with a VIP event with the likes of former Police Commissioner Mick Fuller attending.

At the time, Mangan said he was proud of the longevity of the restaurant.

“Restaurants tend to have a three to five year lifespan in Sydney,” he said.

“The costs are so high and it’s a hard business.

“I never thought we would be here 18 years later because it’s so fricken fickle.

“But I’ve just tried to stay on top of the game.”

Mangan also runs Luke’s Kitchen at the Kimpton Margot Sydney Hotel, Luke’s Table on top of the pylon of the Sydney Harbour Bridge and Lucsan in Potts Point.
