Caviar, wagyu and the famous ravioli: An exclusive look at the menu for Gordon Ramsay’s take over of Matt Moran’s Aria

Tickets cost $495 and sold out in three minutes. Here’s our exclusive look at what diners will sample as celeb chef Gordon Ramsay takes over Matt Moran’s landmark restaurant.

Celebrity chef Gordon Ramsay’s upcoming residency at Aria sold out in three minutes.

Arguably the most famous chef in the world, Ramsay is teaming up with Matt Moran to bring his three-Michelin-starred Restaurant Gordon Ramsay to Sydney this week and The Daily Telegraph can reveal what guests will be eating.

The seven-course menu cost $495 and is designed by Matt Abe, who got his start in the industry as a 17-year-old at Aria and has now gone on to become Ramsay’s chef patron.

The menu consists of dishes such as moonlight flat oyster with dill, caviar and buttermilk, Donnybrook marron, salmon and scarlet prawn ravioli, Wild River duck, beetroot, shallot and Blackberries and David Blackmore wagyu, pine mushrooms, macadamia and malt.

Moran added that for him, there were two non-negotiable dishes on the menu.

“The marron, salmon, scarlet prawn ravioli is a dish that has been on Restaurant Gordon Ramsay‘s menu since the very beginning and the Pecan praline parfait, a dish that has been on the menu since Matt started in 2016,” he said.

“To have Matt Abé, Australia’s first and only three-star Michelin-starred chef, back at Aria cooking Restaurant Gordon Ramsey’s dishes overlooking the incredible Sydney Harbour is going to be something really quite special for everyone.

“He is undoubtedly one of the world’s best chefs; for our guests to experience this at Aria, I can’t wait.”

Ramsay considers Moran “one of my best friends for over 20 years.”

“To tell the story of my friendship and then thread together the incredible relationship we both have with my Restaurant Gordon Ramsay Chef Patron Matt Abé is really a special moment,” he said.

“I hope our guests will appreciate the menu, we spent a lot of time really thoughtfully planning the dishes.”

It’s the first time the restaurant has had a residency outside the UK, and Abe says he’s enjoyed being out of his comfort zone with this collaboration.

“I am hoping diners really enjoy the experience we have created showcasing and celebrating our philosophy, techniques and the finessed approach we take today,” Abe said.

“Demonstrating the evolution, passion and perfection we strive for every day, both now and over the past 25 years.”

Because tickets to the three dinners sold out within minutes, Moran adds there was “absolutely” a chance the two would be collaborating again in the future.
