Brooke Bellamy plans to bring her TikTok famous cookies to Sydney

Talk about big bickies: The internet’s favourite cookies are set for Sydney. Cookie queen Brooke Bellamy says it’s not a matter of if Brooki’s Bakehouse crosses the border, but when.

TikTok’s favourite cookies are coming to Sydney.

Brooke Bellamy – the owner of Brisbane’s Brooki Bakehouse, which makes New York style cookies – revealed she is planning on bringing the viral treats to Sydney.

“We’re definitely looking into a lot of options all at once. We’ve just brought on some great team members, so we are looking at all of our options, kind of just laying everything out on the line. Rather than say, will it happen? It’s like, when does it happen?” she said.

Bellamy was recently in Sydney, where she collaborated with Nespresso on a new and limited-edition Double Choc Salted Caramel Cookie.

The 32-year-old, whose first baby is due in October, has become a TikTok sensation.

Her Brisbane bakery has lines out the door, with people desperate to try her creations, including the famous red velvet cookie. She also has her first cookbook coming out at the end of the year.

Despite her fame, she said she’s only started to understand her reach in the past couple of months.

“If you see the number like, 20 million people watch your video, doesn’t (feel real) … it’s not the same as seeing a crowd (of) 20 million. Only, honestly, the last couple of months where I started to leave the bakery and do some more events do I really notice or understand how big it’s kind of gotten.

“When you’re in the bakery every day, people come in, take a photo, but that’s been going on for a while now so it feels just like normal.”

Bellamy said she doesn’t want to be known for just creating cookies.

“Baking has been so trendy, and especially cookies but everything has its time as well. The cookie is really popular at the moment, yes, but macarons had their moment. Cupcakes had their moment.

“So I think it’s also just about looking towards what’s next, and not getting too comfortable in one lane … which is why we haven’t used the word cookie in our business name and branding, because we do want to be a modern bakery that’s available in lots of different areas, and it’ll grow and evolve over time.”

Bellamy said she’s on a mission to “encourage that women can really have it all”.

“Having my first baby, but also owning a business and finding a way to balance that all out – I’m excited for the challenge.”
