A seasoned hospitality moguel has launched the newest hotspot for Insta-worthy toasties and speciality coffee in the heart of Brisbane’s southside.

A hospitality moguel who opened his first cafe as a teenager has brought his latest Insta-worthy venture to the heart of Brisbane’s southside, giving residents their first taste of speciality coffee within walking distance.
Tom Wilcock, 25, has brought his latest venture Fieldy’s Coffee to the Fifth Avenue complex at Fairfield Rd, Fairfield earlier this month.
“There isn’t much in Fairfield for Insta-worthy toasties and specialty coffee that people can walk to or is easily accessible on their daily commute to work,” Mr Wilcock said.
“We are known for our toasties that are very photographable and are topped with shaved parmesan and chives, made with all fresh and tasty ingredients.
“We’re creating a brand that is known for guaranteed quality coffee,” he said.
Mr Wilcock opened his first business Guilty Cafe in Currumbin in 2018, which is now closed, and his second business Hawthorne Coffee in 2018.
“The vibes at Hawthorne are pastel-hued with a pink and white colour scheme, but with Fieldy’s I wanted to incorporate the surroundings of Fairfield so we worked hard to make the aesthetic forest greens, timbre and earthy,” Mr Wilcock said.
“We have a large seating area so people can take away their coffee or have a seat,” he said.
Mr Wilcock said he is passionate about creating a community for his team and customers.
“I want to make a little hub people come to enjoy the vibe of our team who are like family and to build rapport with the locals,” Mr Wilcock said.
“Our work culture is one big family, my little sister works for me and we all go out once a week and spend quality time together,” he said.
Since their opening on April 3 2024 Fieldy’s Coffee has already made an impression in the area.
“During our first week we kept selling out of bread which was a great sign,” Mr Wilcock said.
“People have been loving the coffee we use, Cult Alley from Melbourne, and the rotating single origins in our own batch brew,” he said.
Fieldy’s Coffee is open Monday - Sunday, 6am - 1.00pm
