Asian-inspired salad bar Fishbowl to open at Newmarket Village
After making a name for themselves in Sydney’s Bondi, a rapidly rising Asian-inspired salad bar will open its sixth Queensland outlet in this a high-end Brisbane northside suburb.

A high-end inner-city Brisbane suburb will be home to a new health food restaurant after the rapidly growing brand announced it would open its sixth Queensland outlet.
Asian-inspired salad bar Fishbowl will launch at the Newmarket Village precinct on July 8 after the success of its Gasworks, Burleigh Heads, Robina, Sunshine Plaza and Chermside restaurants.
The new outlet, opposite Reading Cinemas, would offer 50 per cent off its menu all day and night on its first day of trading.
Co-founder Nic Pestalozzi said Newmarket was an exciting suburb to add to the list of Fishbowl venues.
“We tend to succeed in suburban areas where we can trade seven days a week, lunch and dinner,” he said.
“Fishbowl appeals to families, parents, teens and young professionals.
“An area like Newmarket provides a great catchment for our brand and we hope to attract many new customers with a healthy and affordable choice for lunch and dinner.”
Mr Pestalozzi said it was Fishbowl’s “unique culture” and the lifestyle they had built around it which set their chain apart from others.
“Fishbowl was founded in 2016 while we were finishing uni. It was born out of a passion to create something better than anything we had access to,” he said.
“We never set out to be a health food concept, however using the freshest ingredients and making everything from scratch was simply a given.
“The product is naturally healthy, because that’s exactly what we need it to be if we’re going to eat it everyday.
“That’s also why we’ve surrounded the product with so much personality.
“From design driven spaces, community events, music, fun uniforms and the great people who make Fishbowl tick, it’s all part of our unique culture and the lifestyle we’ve built around the brand.
“We were born out of a desire to create something special and unique, that was solving a genuine gap in the market.”
The chain has expanded rapidly after opening its flagship salad bar at Sydney’s Bondi in 2016.
On top of its six Queensland locations, Fishbowl has 24 in NSW and seven in Victoria.
Their first Queensland store, at Gasworks in Newstead, opened less than a year ago.
Mr Pestalozzi said there was more coming for residents in the area.
“The response from locals has been extremely supportive and we’ve thrown parties, run clubs and collaborated with a bunch of local businesses in such a short time,” he said.
“It truly feels like we’ve been here much longer than a year.
“We’re opening in Fish Lane in South Brisbane, Adelaide St (in the CBD) and Surfers Paradise in the coming months.”
Fishbowl’s Newmarket opening will run from 11am until 9pm.
Mr Pestalozzi said they were excited to be collaborating with upmarket baker Jocelyn’s Provisions.
Customers could also expect some delicious Asian inspired treats, as well as kombucha from the guys at Good Happy.
