One beer lover’s thirst for brewing perfection
IT takes passion and hard work to brew the perfect beer and Adam White has made a cracker for the Moreton Bay Food and Wine Festival in September.

IN Adam Gibb’s opinion, there’s no finer drop than the amber one and no more important drink in our history than beer.
“At the moment, history says beer was carried by man when the continents were joined. It goes back that far because beer was a safe drink, whereas water wasn’t,” Adam says. “In England up until the 1800s beer was still drunk more than water, until tea came in.”
And, according to Adam, who opened White Brick Brewing at North Lakes in November, there’s a raging debate over which came first — bread or beer. In his mind the answer is clear, or amber.
There is no doubt Adam is living his dream, and his passion for history and the region he calls home is further reflected in the names of some of his brews — Coach Stop Cider, Plantation Pale Ale, Petrie Pilsner and Brickworks English Mild Bitter.
“We’ve done limited editions — we have our chocolate orange stout for Easter — we did a really interesting lager with Australian-made spices for Anzac Day, and we’ve got a couple of new ones coming up soon,” he says.
One of those is the Moreton Bay Beer he’s created for the Moreton Bay Food and Wine Festival on September 8 and 9. The event will be held at Redcliffe Pde, Redcliffe.
“It’s a 4.8 per cent lager which will drink really well. It will be a very refreshing drink for a nice warm day and it will match perfectly with seafood and some of the products that are going to be showcased during the event,” Adam says.
“It will be available from our stand, Moreton Bay Region Industry and Tourism will be organising some of the sales, and you’ll be able to buy the beer from the brewery as well.”
So what makes White Brick Brewing’s beer special? “We take a lot of care with it. It’s the result of a lot of passion, and so far we’ve got seven medals for our beer in essentially the six months we’ve been up and running, which I think is fantastic. It says we really are making great beer,” he says.
When asked if he has a favourite, Adam laughs and says “the next one” but refuses to elaborate. “I can’t tell you. I’m working on something I’m really looking forward to. We’re hoping to brew it next week,” he says.
“I think there’s nothing else like it locally, even parts of Brisbane.”
The former IT professional doesn’t miss his old gig for a second, and when you’re producing 130,000 litres a year why would you? “I’m essentially living my dream. I always loved beer — it was just one of those things — I decided the time was right.”

Thanks to Redcliffe’s newest coffee shop GRIND Coffee Bar, you no longer have to choose between your two great loves — your dog and your coffee. They will welcome you and your fur-baby with open arms — serving puppuccinos all weekend. They’ll even provide your pooch with a treat, bowl of water and patch of astroturf. And the drinks they create for us are also brag-worthy.
4. Mon Komo Hotel Cabana Bar
Feel like you’ve stepped off the plane and into Cuba, while you relax with your favourite cocktail in hand, overlooking the picturesque Moreton Bay at this Cuban-inspired pop-up bar thanks to our friends at Mon Komo Hotel.

Enjoy a bite to eat and something cool to drink in this hipster paradise.
