Brisbane couple opens new wine bar Spill Wine in Maleny

Two Brisbanites hope their boujee wine bar plan for the Sunshine Coast hinterland has legs as they open a “super luxury” space fit for the finest of wine connoisseurs.

A Brisbane couple is popping open a “super luxury” wine bar at the Sunshine Coast hinterland where people can buy bottles worth a mouth-watering $1000.

Jamie Fleming and Clare Hutton are opening a 30-seat premium wine bar and shop Spill Wine in the heart of Maleny in early March, starting with 150 to 200 different wines.

The most expensive bottles - at $1000 a pop - are red wines sourced from Alvaro Palacios from Priorate Spain and Domino de Pingus from Ribera del Duero, Spain.

Mr Fleming said he enjoyed quirky but quality wines and wanted to bring something “super luxury” to Maleny.

“We’re taking the hard work out of finding the really cool sh-t,” he said.

Mr Fleming worked for global beverage giant Diageo for six years before opening tapas bar Alba Bar & Deli in Brisbane CBD in 2019.

He said he wanted to open this new wine bar after noticing a gap in the market for high-quality, interesting-tasting wines in the hinterland, saying he struggled to find any when visiting his partner’s parents in Maleny.

“We were sick of not being able to buy weird and wonderful wines,” he said.

Mr Fleming said he had invested a “solid” amount of money on its wine list alone, and was now busy applying the finishing touches to his Maple St new site.

The entrepreneur said he wanted his venue to be part of the town‘s community, give people access to premium, hand-selected wine, and become known as a go-to stop for wine enthusiasts.

He said he eventually wanted to shelve 350 to 400 different wines.

Maleny’s Shotgun Espresso cafe is also hoping to be known for more than its coffees when it soon adds a wine bar.

Co owner of the Maple St business Kelly Robson said her cafe will open a wine bar, serving wine, cocktails, and bar food, at nights in a couple of weeks.

Ms Robson welcomed Spill Wine to the neighbourhood and further “great things” at night in Maleny.

“Wine bars are fun and enriching and it’s my prediction they will take the place of fine dining,” she said.
