Jaye and Sandy Scheffler open Cockatoo Coffee cafe
For eight months a family travelled across Australia, tasting the coffee everywhere they stopped. Now, they’ve sorted the bad from the good and opened their own cafe on the Fraser Coast.

Travelling around Australia for eight months, Jaye and Sandy Scheffler had many cups of coffee at different cafes.
Some were delicious. Some were plain awful.
So, when it came time to set up their own business, the Schefflers knew they wanted the best coffee they could find, preferably from a local supplier.
They opened their business, Cockatoo Coffee, in August 2022, and have been doing a roaring trade ever since.
Located in Kent St, Maryborough, Cockatoo Coffee offers homemade food, milkshakes, ice cream and, of course, coffee, which the couple sources from Hervey Bay Coffee.
Jaye said it took three months for them to be ready to open.
They used to run cafes and restaurants in Western Australia but moved to the Fraser Coast 12 months ago and started operating their mobile coffee van.
Opening a cafe, Jaye said, was the next step, although their van would still be operating around the region.
The couple drew on their experiences when they travelled around Australia for inspiration.
“We stopped for a coffee everywhere we went,” Jaye said.
“We had some really bad ones and some really nice ones.”
He said they had been pleasantly surprised by how welcoming other retailers were around them in the CBD.
The couple were focused on buying local when it came to their business, Jaye said, with a passion for creating good food and giving every customer a fun experience.
Their two sons, aged 12 and 8, loved helping out too, and it was a real family business.
New businesses are opening across the city right now, with Antonio’s Pizzaria set to start trading in coming weeks and a 7-Eleven outlet to open its doors in Maryborough soon.
Popular Mexican takeaway giant Guzman Y Gomez has also unveiled plans to open a new store in Maryborough.
