New venue Ciccio’s Pizza and Gelato owner Emanuele Malara said think duck liver bases, beef cheeks and a meat loving experience.

“I wanted to bring gourmet pizzas to the market, the best classic red, classic white and of course the best modified pizzas you can find,” he said.

The former Gemelli chef of nine years said he wanted to create a fantastic menu made with the best ingredients anyone can fantasise of.

“Crispy shallot atop fennel sausage, fresh cow mozzarella – I wanted to try to bring even the usual meat lover pizza to the extreme of creativity,” Mr Malara said.

Having run his own restaurants in Rome before moving to Australia a decade ago, the chef said he wanted to keep the gelato made on site “classic” – just like what you’d find in Italy.

“You have everyone trying to make the gelato look better but I’m all about the flavour – it’s totally different, it’s amazing,” he said.

The venue replaces Marilyn’s Bar Broadbeach, fitting around 50 diners and offering wine pairing for anyone wanting to take their dining experience up a notch.

The native Sicilian said his venue was the first restaurant in the country to serve their dine-in pizzas uncut, with a pizza cutter to enhance the fun of food.
