Owner Scott Osborne said it was busy at the outlet, which has Shields St frontage.

“The food looks amazing, we are using all Australian fruit and vegetables either sourced locally or from Rusty’s market,” he said. “We’re freezing down our own fruit instead of buying imported, pre-diced fruit.”

He said one exception was the Brazilian Acai.

Mr Osborne said Acai berries were rich in fatty acids, contained 19 amino acids, and more antioxidants than most other berries, and were high in fibre.

He started the East Coast Paella Company in 2017 and is passionate about cooking paella as well.
