Brooki Bakehouse opens at Pacific Fair on the Gold Coast

Hundreds of Gold Coasters lined up for hours on Saturday to get a taste of Brooki Bakehouse’s viral sweet treats.

The cookie company, founded by Brooke Bellamy in 2022, opened their fifth location inside Pacific Fair in Broadbeach, marking their first store outside of Brisbane.

Before the store opened at 9am, there was already a line with about 300 people through the centre.

Meaghan Schultz and her daughter Stella, 11, flew up from Sydney to try Brooki’s cookies, cupcakes and brownies.

They arrived at Pacific Fair at 6am and were the first customers in line.

“I have been watching her videos for a while and I brought her cookbook so I’ve been making some of her recipes,” Stella said.

“When we found out she was opening a little bit closer (to Sydney), we decided to fly down.”

Gold Coast teenagers Coco, 15 and Poppy, 13, were also in line.

They were excited to try the red velvet and Dubai chocolate cookies.

Ms Bellamy said she was excited but a little nervous to open the new store, which was a kiosk in the middle of the centre near Coles.

“It’s amazing when you’re so passionate about something and then you see young girls and their mums (in the line who are) just as excited,” she said.

“That is really special because I started baking in the kitchen with my mum when I was younger.

“Now being a new mum, I can see that being the evolution for my daughter so it is very humbling.”

Ms Bellamy said all the sweet treats sold at the kiosk were made at their production kitchen in Fortitude Valley in Brisbane before delivery drivers transport them to the five stores.

She said the Gold Coast location was the “perfect way” to bring Brooki to more people.

“For us, there are so many tourists that come to the Gold Coast every year so it’s a way for us to take the brand to all the international travellers and people from around Australia,” she said.

“A lot of people said they would rent a car for the day and drive up to Brisbane from the Gold Coast just to come to the bakery.”

Brooki Bakehouse’s Gold Coast store is open daily from 9am inside Pacific Fair.
