“It looks like something Shrek would eat,” says my guest, staring at the striking green tofu burger before her.

Made with a matcha green tea bun, the giant sanger is one of the star attractions on the menu at the new Evolve Organic cafe in Newmarket, in Brisbane’s inner north.

Grown, the new vegan cafe in Brisbane’s West End, plants some fresh ideas

It’s a relatively small space, but large windows shower the polished concrete floored-room with sunlight, leaving it feeling light and bright.

Tucked away around a corner is a cute reading nook piled with pillows that looks so comfy diners may just need an intravenous drip filled with coffee to stop them from falling asleep in it.

The compact menu is an all vegan, all organic affair with many of the items also gluten free.

At breakfast you’ll find the likes of Bircher muesli made with kombucha; mushroom and black truffle paté; potato rosti with tempeh chorizo; and the Japanese cabbage pancake okonomiyaki.

At lunch there’s everything from a Thai green curry to a beetroot and hemp burger, as well as a feast of sandwiches, salads and sweet treats in the cabinet.

Our vibrant green creation ($16.50) is available at lunch and while its colour is no doubt for show, thankfully, it’s certainly not a case of style over substance.

The bun itself is light and fluffy and toasted slightly to ensure it holds together.

While the firm tofu patty has been marinated in chilli for an addictive kick, which plays well with the acidy kimchi.

It’s served with a shot of the gut-cleansing kimchi pickling liquid, making this a burger you actually feel good about eating.

But for the pinnacle of what’s currently considered healthy eating, look no further than the Evolve bowl ($22).

It’s loaded with almost every ingredient that has sparked a nutrition trend in the past few years: house-preserved live cultured pickled vegetables, probiotic kimchi, mixed seeds, chickpeas, kale, pumpkin puree and beetroot hummus.

With a multitude of textures and balancing the five key pillars of flavour: sweet, salty, sour, bitter and umami, not only is this bowl good for you, but it tastes pretty darn delicious too.

Coffee comes from Toby’s Estate and is well made, while there’s a plethora of other drink options including super-sized smoothies, fresh cold pressed juices, tea and popular health tonics like golden and matcha lattes.

Drinks are more expensive than at most regular cafes across Brisbane, but you are paying a premium for the use of organic ingredients.

Service is friendly and swift, and though attentiveness occasionally wanes, guest still feel taken care of.

For a cafe you’ll walk away from feeling nourished and fulfilled, Evolve Organic is great.
