Quirky Albion bakery Doughcraft serves savoury doughnuts

A new inner-city bakery is going outside the box with its range, creating everything from caper-topped doughnuts to blue cheese bread.

A quirky, first-of-its-kind bakery has opened in Brisbane serving everything from savoury doughnuts to blue cheese bread.

Doughcraft, in foodie precinct Craft’d Grounds in Albion, in the city’s inner north, combines both French and Italian baked goods in one store, serving the likes of European bread, paninis, pastries, pasta and charcuterie boards.

With owners Samantha Taverner, Marco Conti, Steven Chevalierand Salvatore Compagnone coming from either a cheffing or baking background, what is sure to set the business apart is its unusual twists on classics.

Think a savoury doughnut called the “Bombolone Salato” filled with mascarpone and topped with sesame, poppy seeds, salt crystals, and crispy capers; as well as raspberry-filled brioche buns, and gorgonzola bread sticks.

“We want to take everyone on a journey of the senses and palate,” Compagnone said.

More traditional items will also be available, such as sweet Italian doughnuts, croissants, pain au chocolat, French baguettes and lasagnes, made by the group’s wholesale arm Farine & Co.

There will also be a glass-enclosed preparation area where customers will be able to watch pasta and viennoiseries being made for the bakery. This space will then be used for upcoming masterclasses on pasta and bread making.

The venue opened this week in the front kiosk of Craft’d Grounds next to Seven Miles roastery and distribution, which is now serving its coffee out of neighbouring cafe Collingwood Black.
