As declared by its name, the 60-seater will specialise in sushi and sashimi, with more than 80 per cent of the menu using premium seafood sourced from across the world, such as fatty Japanese tuna, New Caledonian prawns and sea urchin from Tasmania.

Just as premium will be the prices, with head chef Shimpei Raikuni’s sushi selection (12 pieces) and sashimi selection (16 pieces) costing a cool $150 each. There will also be foie gras sushi for $40 a piece and caviar sushi for $60 each. While a set multi-course omakase menu will set diners back a whopping $330 per person - the most expensinve degustation in Queensland.

Tempura options like king crab and abalone will be available, as well as wagyu from the grill. All this will be paired with a drinks list that runs from Japanese teas and beers to sake, umeshu and whisky. While the wine list will also offer plenty for the well-heeled with bottles of 2018 Romanee-Saint-Vivant Grand Cru Burgundy setting diners back almost $8000, while celebrations in the eight-seater private dining space on the mezzanine level of the restaurant can be done over a $7500 3L magnum of Louis Roederer Cristal.

The restaurant will open Wed-Sun for lunch and nightly for dinner.
