IT’S one of the world’s most loved and popular Indian restaurants, with more than 150 stores globally, now Sankalp is set to open in Aspley, in Brisbane’s north.
Renowned for its authentic flavours from both India’s north and south, and it’s specialty dishes including dosas and the hard-to-find rice pancakes known as idli, the eatery will take over the former Fasta Pasta site on Gympie Rd in a deal done by real estate agent Hudson Dale from Raine & Horne Commercial Brisbane North.
The work of Sunil Thakkar and Kandarp Makadia, it will be the second Sankalp restaurant in Brisbane for the pair, who own an outlet in Annerley in Brisbane’s south.
“We’ve got so many customers on the northside and they’re driving all the way so we thought we would open a restaurant in the northside for them; and we are also losing customers on the weekends because we have so many people come in we can’t accommodate everyone,” Mr Thakkar said. “Having two restaurants means we can fit in everyone.”
Mr Thakkar said what made the restaurant stand out was that all the curry bases were gluten and dairy free, and were made from traditional recipes; while their naan was cooked in a tandoor, not the widely used combi ovens that have become popular in Australia.
The co-owner said customers were obsessed with the venue’s paneer methi garlic – a curry with an incredible 28 spices that had become the most ordered dish; alongside their huge range of dosas, which are all served with unlimited complimentary chutney, and the idli accompanied with free bottomless bowls of lentil soup.
The 125-seat, 280sq m fully licensed restaurant will be fitted out similar to their Annerley venture, with timber and red chairs and chandeliers; while takeaway and delivery services will also be available.
Sankalp Aspley is set to open the first week of August.
