What to eat at the new Hayman Island resort

It’s one of the most anticipated hotel openings of the year, and now we can exclusively reveal the new culinary line-up at InterContinental Hayman Island.

It’s one of the most anticipated hotel openings of the year, and now we can exclusively reveal the new culinary line-up at InterContinental Hayman Island.

The resort will offer five distinct dining destinations: Pacific, Aqua, Amici Trattoria, Bam Bam and Bar Fifty.

Pacific will be the signature brasserie-style bar and restaurant offering gourmet breakfast and a la carte dinners, alongside some of the best wines in the country, premium spirits, cocktails and boutique beers. While Aqua will be the poolside eatery serving everything from seafood to salad bowls and classic cocktails.

Amici Trattoria is the resident Italian offering pasta and wood-fired pizza; with Bam Bam a Pan-Asian eatery with an Australian twist. Finally Bar Fifty will be the lobby bar with sophisticated cocktails, canapes and light bites.

In charge of the F&B will be Joshua Dows as Director of Restaurants and Bars, Erwin Joven as Director of Kitchens and Anthony Kramer as executive sous chef.

“Dows earned his stripes on board luxury cruise ships, catering to the many and varied desires of 3,000 passengers,” an InterContinental spokeswoman said.

“Our philosophy is built around giving guests a truly unique restaurant and bar experience across all our venues, mixing the very best of local flavour and global know-how,” Dows said. “For me, it’s about creating a lasting memory. It is a wonderful pleasure to experiment and uncover dining experiences which reflect not only the heart of the Whitsundays, but experiences filled with fun, distinction and refinement. We cannot wait to welcome our first guests in July.”

Joven has extensive experience working as an Executive Chef in luxury remote locations such as Fiji, Philippines and the British Virgin Islands.

“Joven has a passion for grilling outdoors and BBQing so guests to the island can

look forward to the intoxicating aroma,” the spokeswoman said.

Of Kramer, she said: “Kramer joins the team as Executive Sous Chef having returned to Australia after a decade working in a high-end resort in Vietnam. Kramer brings a wealth of originality and experience working on Lord Howe Island, the Maldives and other remote island locations across the globe. Kramer loves fishing so there’s a good chance his catch of the day will make it onto the menu.”
