Stokehouse Q staff pool redundancy cheques to open new restaurant

Executive chef Ollie Hansford and two of his former Stokehouse Q colleagues are putting the shock closure of the fine dining restaurant behind them, and going out on their own

AFTER being let go from Brisbane’s iconic Stokehouse Q restaurant when it shockingly shut in August, three former staff members have pooled their redundancy cheques to open a new pasta bar.

Executive chef Ollie Hansford, sommelier Aleks Balodis and drinks guru Stephen Overty will open Siffredi’s in Brisbane’s Teneriffe in mid-November along popular Vernon Tce.

The menu is still a work in progress, but the plan is for four snacks, a handful of spaghetti-based main courses (not all of which will be traditional) and alcohol-infused soft serve ice cream.

The concept will be similar to West End’s Pasta Club, where Mr Hansford worked in July while Stokehouse Q remained shut, before it announced in August it wouldn’t be reopening.

A liquor licence is still pending, but once approved a concise wine offering will be in play.

The venue will boast 16 seats inside with a further 40 outside along the outdoor terrace.
