The restaurant from the team behind hugely popular Brisbane eateries Same Same and Honto and executive chef Ben Williamson has been inundated with diners trying to snag a table, with the venue now taking bookings four months in advance.
“We didn’t expect it,” said co-owner Ty Simon. “We launched on Monday night and I think by Monday night people were boasting that they were booking in October, and now I was told people are booking in December.”
The restaurateur said they were overwhelmed by the positive response, especially after such a long lead up time, with the eatery two years in the making after being held up with council issues, building problems and COVID-19.
But Mr Simon said with Agnes’s new-found popularity also came immense pressure.
“For us it proper amplifies the pressure that if people are prepared to book so far out you can’t let them down,” he said.
“We have to make sure that every night we deliver across the board: service, food, ambience.”
Driving the restaurant’s popularity is its unique offering, with all food cooked in a huge fire pit, with no stoves or ovens on site. Even the drinks list features fire-powered cocktails with some key ingredients roasted or smoked.
The venue is currently running at reduced capacity because of COVID-19 restrictions, and with any luck, restrictions will be eased further so the venue can seat more diners.
