Moving into an 155sq m indoor-outdoor site at the precinct in Brisbane’s inner north, the duo will be serving up their signature array of French classics from buttery croissants and artisan bread to patisserie almost too pretty to eat. And to complement the flour delights, the space – designed by Brisbane interior gurusClui Design – will also feature a stunning champagne bar, serving French bubbles, alongside Bear Bones coffee, Tavalon tea and a small collection of global wines.

“Enjoying a freshly made patisserie with champagne is something everyone should experience,” Mr Bournazel said.

The bakery is aiming for an April opening, where it will be joined by other new Portside eateries including seafood restaurant Fosh by Michael Tassis (Massimo, Opa, Yamas).

TALKING A GRAPE GAME

His second venture across town will have a strong European feel with the dark, intimate space to pour a generous range of Italian and French wines, along with a few Australian signatures.

There will be an incredible 60-plus varieties by-the-glass, including in Coravin, with a comprehensive 200-label list that will rotate monthly.

Wines from Italy’s Piedmont region will be a particular focus, with more than 25 barolos poised to make the offering. To ensure drinkers don’t go hungry, there’ll be a seafood-heavy Italian and French menu changing every two months, running from snack and share-style options through to sizeable main courses.

“As we are Italian, we want the people to eat properly,” Duseli said.

D.Vino is set to open mid-Feb.

SANDWICHES TO FILL HOLE

Hole-in-the-wall bakery Mis.Spelt in Paddington has served its last loaf of bread, with a fresh new business set to take over the Latrobe Tce space.

Owners Sam Holmanand Eli Rami, also behind coffee hotspot Blackout next door, decided the venture, which opened in October last year, wasn’t quite working as it was selling a range of sweet and savoury baked goods. The community had, however, fallen in love with the deli-style sandwiches on offer, so the gents reached out to their friends at Wilston’s popular Sunny Side Sandwiches, who agreed to take over the space for their second store.

Fit-out will begin soon on the new operation, with Sunny Side’s Mack Bowers hoping to perhaps extend into the adjacent tenancy to offer some dine-in seating for customers, as well as catering to the grab-and-go market with a beautiful cabinet display.

Sunny Side’s much-loved array of hot, cold and toasted sangas, from an egg salad number (inset) to a chicken schnitty version, are due to be available, all made fresh to order.

Bowers hopes to have things up and running by Easter.
