Gambaro family open new pizza takeaway

They’re known for their seafood and steak, but famous Brisbane hospitality family the Gambaros are returning to their Italian roots, opening their first pizza-only operation.
Casual takeaway Sette Pizza will launch on Brisbane’s Caxton St, right next door to the family’s beef restaurant Black Hide and opposite their eponymous pescetarian palace, Gambaro’s Seafood.
Partnering with Italian chef Luca Murgia on the venture, the family, including brothers John, Donny and Frank, aims to serve “the best pizza in town”.
“There are lots of great pizza places but we’re going to throw everything we do at this, and I can say the pizza I’ve been trying and Luca’s trialled over the last month or two have been exceptional,” John Gambaro said.
“I think the proof will be in the pudding.”
While helping ensure the consistency, quality and flavour is just right has been family matriarch, Josie Gambaro.
“It’s just been so good to have Mum involved as a part of our family tasting and experimenting all the way through,” John said. “She’s a tough task master but she’s given it the thumbs up, which has been great.”
After months of experimenting with the recipe, Sette has settled on a 48 hour proofing of the dough, which uses Italian flour, to create a contemporary Italian base that is “fluffy, light and crispy” and crowned with the best local ingredients.
There will be both white and red based varieties moving from the classic margherita to a spicy ’nduja version to their signature “Sette bello” with mozzarella, yellow cherry tomatoes, crispy pancetta, roasted potatoes, capsicum oil and fried basil.
Calzones and arancini will also make the menu, as well as a tiramisu and Nutella calzone for dessert.
“We’re trying to offer high quality produce at very affordable prices,” John said.
The business will predominantly operate as a takeaway, designed for everyone from families in need of a quick dinner to local workers looking for lunch and footy fans on the way to a game at Suncorp. But there’ll also be a strip of seating on the footpath outside the restaurant where diners can enjoy a bite and a drink, with a handful of popular, well-priced wines, and about four local and Italian beers available.
As well as the Caxton St takeaway, Sette will also operate a mobile pizza truck for events, catering to groups from 10-200 with antipasti and pizza.
The new takeaway will open Wednesday, September 1.
