The critically acclaimed riverfront restaurant will be undergoing some major renovations along with its sister pop-up Ciao Papi.
While Ciao Papi was only designed to be a short-term eatery, residing in the former bar area of ARC, plans have now been made for it to become a permanent fixture, with the two venues to be separated in the renos.
The tiny Italian will score its own kitchen, head chef and become a destination in its own right with an entire new fit-out, allowing for ARC to focus on its next chapter.
ARC head chef Alanna Sapwell says she wants to dramatically change the menu at the restaurant, moving to a more clean, fresh, vegetable-orientated offering using produce grown in the restaurant’s garden and from great Queensland suppliers.
“A lot of dishes are usually two-thirds meat, one-third vegetables; I want to make it two-thirds vegetable and have veg be the hero,” she says.
The restaurants will be closed from December 23 to February 2, allowing staff to have a break before returning recharged for the changes ahead.
