When John Singleton created Saddles at Mount White in 2018, he joked he’d built the 110-seat luxury “bakehouse and eatery” so he “had somewhere decent for coffee on the weekend”.
His picturesque base, Strawberry Hill Farm, is a five-minute drive up the road, also on Mount White (66 kilometres north of Sydney’s CBD) with sweeping views over the Hawkesbury River.
