Looking down on Phoenix, Arizona coming into land, you’ll spot hundreds of irregular green shapes amid the parched desert landscape.

It’s difficult to work out what they are until the plane drops altitude revealing these shapes not as irrigated farms, but golf courses with sand bunkers and waterways.
