It’s not that guacamole is unusual. Far from it. But the guacamole I’ve just tasted is so good that it leaves every other version I’ve had in the dust. And that detail – that even the dips here are the best you’ve had – tells you everything you need to know about Soneva Secret, a mere slip of an ultra-luxurious eco-resort on the western edge of the Maldives archipelago.
Perhaps it’s because it’s a particularly piquant Venezuelan version of smashed avo. Or perhaps our tastebuds are extra receptive after a peaceful night lulled by the lapping of the lagoon beneath our overwater hideaway. But the guacamole served with Chilean charcoal-grilled bread as part of the South American breakfast on the second morning of our stay is so good I beg the chef, Danielle Erika Abriam, for the recipe.
