My first question to Guillaume Brahimi is, of course, “What on earth are we doing in an Italian restaurant?”

He is perhaps the most famous Frenchman in Australia, known as much for the carefully scalloped, yellow-as-butter Paris mash that he served at his three-hatted restaurant, Guillaume at Bennelong, as he is for his love of French rugby.
