For a moment I’m taken aback when Jane Seymour greets me outside Nobu, the Japanese restaurant at Sydney’s Crown Resort, with a confident handshake and a sharply tailored red suit to match.

Stupid as it is to admit, I’d half been expecting to find a genteel figure in a bonnet, long skirt and lace collar, a la the Wild West physician, Michaela Quinn.
