A NEW eatery bringing together a dream team of highly talented hospitality figures promises to up the ante for dining in the south of the CBD.
Herringbone, which will take over the former Panacea in Halifax St, is the latest project from chef Quentin Whittle, right, his front-of-house comrade from Stone’s Throw in Norwood Paul Tripodi, and Ben McLeod, the affable co-owner/manager of city favourite Peel St.
The trio plan to create a hub for the local business and residential community.
“We’re not trying to recreate Peel St, we’re not trying to recreate Stone’s Throw – it’s going to be its own entity,” Quentin says. As well as the fishy allusion, the name Herringbone refers to the pattern seen in fabric.
“It’s about weaving together cultures and people in a warm environment,” Quentin says. “What’s really important is the community aspect of the area and who is on the street. We want to cook for the people there.”
“A fair bit of work” is needed, Quentin says, before Herringbone opens in early September with dining space in three zones: a restaurant inside, an atrium area and outdoors, which will be “awesome for spring and summer”.
Quentin, whose friendship with Ben goes back to the Melting Pot (now The Pot) in Hyde Park, says the project has been bubbling away in his head for more than six years.
“We’ve been looking for the right spot and now we believe we’ve found it,” he says.
Herringbone is expected to open at 72-74 Halifax St, city, in September
