My favourite SA wine (other than my own) is … BK Gower Pinot Noir.
The best hangover cure is … drinking less and drinking well-made biodynamic wine.
The best wine I have ever tried is … Domaine de la Romanee-Conti Echezeaux Grand Cru 1989.
My bucket-list wine or wine experience would be … to taste my way through all the great riesling vineyards of Germany, France and Austria.
The first glass of wine I ever sampled was … an Ashton Hills Reserve Pinot 1996, which is one of the most memorable wines that grabbed my attention and steered me to my career in winemaking.
The SA restaurant with the best wine list (other than my own) is … FermentAsian, in Tanunda.
Do I think a $785 for a bottle of Grange is good value? Yes, it is for the heritage value, but I find it hard to justify spending more than $100 on a bottle of wine given value is entirely subjective and my preference is for drinking single-origin wines.
If I could never drink wine again … I’d drink even more coffee.
My choice of a last supper would be … sashimi kingfish, Chianti-style 50mm thick T-bone, and tarte tartin. To drink, Raveneau Chablis, Castagna Genesis Syrah and Trossen Madonna riesling.
To me, wine is … capturing in a bottle the taste of the grape, the vineyard and season, with only subtle influences from the hand of the winemaker. Great wine is made in a great vineyard.
